Everyone seems to be cooking at home more since Quarantine began. Here are a few of our new favorite dishes we’ve tried since staying home. Find those silver linings in the Quarantine, friends!

Meal #1 Mexicali Tortilla Skillet Recipe:
Mexicali Tortilla Skillet
Makes 4 servings

12 ounces lean ground beef
2 medium poblano peppers, seeded and chopped
1 cup diced onion
12 ounces ripe tomatoes, chopped (about 3 medium)
1 tablespoon ground cumin
2 teaspoons paprika
2 to 3 teaspoons sugar
½ teaspoon salt
2 ounces baked tortilla chips, coarsely crumbled
¼ cup (1 ounce) shredded sharp Cheddar cheese
½ ripe medium avocado, chopped
¼ cup chopped fresh cilantro
¼ cup sour cream
1 lime, quartered

1. Cook and stir beef in large nonstick skillet over medium-high heat 2 minutes. Stir in peppers and onion; cook and stir 4 minutes or until soft. Stir in tomatoes, cumin, paprika and sugar; bring to a boil. Reduce heat; cover and simmer 5 to 10 minutes or until tomatoes are tender. Remove from heat; stir in salt.

2. Top with tortilla chips, cheese, avocado and cilantro. Serve with sour cream and lime wedges.

Deviations that I made: I rarely measure out ingredients or properly time things. I didn’t have any poblano peppers, so I used a yellow bell pepper. I also nixed all the individual spices, and instead popped in an Ole El Paso taco seasoning packet instead and any shredded cheese that you have will do.

Meal #2 Salsa Chicken with Cilantro Lime Rice Recipe: https://www.delish.com/cooking/recipe-ideas/a30519954/crockpot-salsa-chicken-recipe/ AND for the Cilantro Lime Rice, I use 2 Success Family Size Boil in Bags of white rice, 1 lime quartered and ½ cup fresh cilantro. I boil the race according to the package adding a dash of garlic salt. When done, I drain and mix in cilantro, squeeze in lime juice and voila.

I also heated up and added a can of Ole El Paso Re-fried Beans along with any chopped veggies that you may like.
