Yah, I learned from somewhere that mixing the shrimps w/cornstarch, refrig and then rinse it, it will give shrimps a better texture.

can we first cook the bamboo shoots and the water chest nut first,rather than the prawn?cause i think the prawn get over cook really fast.

It depends on what you're using it for. Long grain rice is the common type of rice used in most Chinese cooking.

There is enough salt in the ingredients for the sauce so there is no reason to add more salt to the dish.
