I show how to make Dirty Rice. This Cajun specialty is a delicious side dish that tastes good enough to me to eat as a meal. It gets its name from the chicken livers giving the rice a “dirty” appearance. I used brown rice and wild rice, which I think look more natural in this dish and improve the nutrient density. And some people tell me my videos have a natural ASMR quality.

Man it is hard to find dirty rice recipes without the livers and gizzards! Please if anyone knows of ones that are on you tube please reply to this message. As to the cook it does look good to eat, I just do not like livers and gizzards. Thank You.

That's just like my Momma's dirty rice! She cut a whole chicken in half and put the dirty rice on top (like a stuffing – meat side down) and covered and baked them. There is no comparison between the bowl of dirty rice and the baked on top the chicken dirty rice. The baked was more moist. Thanksgiving turkey was only stuffed with dirty rice. Cajun food is wonderful.

My frig quit, so I need to use up the chicken livers I was collecting in the freezer to make liver sausage. This is it! My neighbor took my other sausage off my hands, so I'm just gonna riff and use a little cubed ham. No celery and I can't buy anything until the new frig arrives, so I'm just gonna use some celery seed for that wonderful flavor, and bell pepper because I like it. I like one bowl meals and need more veg, so I'm gonna use up the okra I couldn't give away. It's all about using and enjoying what you have. Thank you for the demo, this is my first time making this, too. <3

My family is from Louisiana and I have ate a lot of dirty rice. We used it as a side dish. I love it, I would like to try your version of it sometime it looks good.

I like your brown and wild rice combination…I usually do white & brown rice…..I don't like too much green pepper, but yellow and red bell peppers work well, here…I use chicken livers and a bit of spicy sausage…I like your version and might try it for my Thanksgiving entree…
