340g Ackee (Drained Weight) Feel free to use any ackee you prefer
1 Pack of saltfish 205/275g

1/2 Onion or 1 small onion
1 Tomato
3 Springs of Thyme
1/2tsp Ground Black Pepper
2 Pegs of Garlic
4 Pimento Seeds
1/3 of 3 Coloured Sweet Pepper
Scotch Bonnet Pepper (Optional)
8tbsps of Sunflower Oil (Or whichever oil you use)

I know how you feel with having to use tins, I too have to use tinned Ackee and Callaloo, I have to order them online has I cannot get them where I live in Scotland. And forget scotch bonnet, I have to sub that with chillies or dry chillies. Sometimes I still wish I live in Birmingham…
