“Egg Curry is one of dishes that is ideal when you are bored of either too many non-veggie or too many veggie dishes. This is spicy and a delight for egg lovers. Preparation is comparatively easy too.
Ingredients

2 boiled eggs
1 potato
whole cumin seeds
1 whole red chili
2 tej patta (Bay Leaves)
1 big chopped onion
2 green chili
1/2 teaspoon cumin powder
1/2 teaspoon coriander powder
1/4 teaspoon red chili powder
1 teaspoon garam masala powder
1/2 turmeric powder
1/2 teaspoon ginger and garlic paste
Vegetable oil
Salt
Preparation time: 10 minsCooking Time: 25 minsServes: 2Steps1. Boil 2 eggs, remove the hard shell. Then take the knife and slightly cut in the middle of the eggs, but do not completely cut it into half. Just a quarter inch deep cut will serve the purpose (to let the spice go inside during cooking). Mix very little turmeric powder and salt on the surface of the eggs and keep aside.2. Take 1 potato, peel off the skin and cut it into 4 equal parts. Mix very little turmeric powder and salt.3. Take a non-stick kadhai (bowl) put 1 cup of vegetable oil and heat for 4 mins. Fry the potato until it becomes golden brown.4. In the same vegetable oil fry the eggs. Put alittle oil in Karahi and add all ingredients except eggs and potatoes. Let it cook for a coupl eof minutes and add potatoes and eggs and little water. Cover the dish cook for afew minutes and serve with Brown rice Pulao.

I cook 2 pounds of brown rice at a time and freeze it up.  I use 7 1/2 cups of water with 48 oz of tomato sauce, 1 or 2 onions and garlic.  After it is cooked, I do one of 2 things, but I always put a protein in it (Chicken or any ground meat works well. 2 pounds is more then enough) .  First choice is 1 small cabbage (raw and diced) that will cook a little in the hot rice.  It will still have a crunch to it which gives different textures to the dish.  2nd option is throwing 1 or 2 pounds of frozen vegetables in (I prefer broccoli, peas, collared greens, ect…)  This method cools the rice down fast and allows you to get this cooled fast to put in your fridge without heating up your fridge to much.
 I will try your method of taking it off the heat, that is a great idea.  Thanks for the video, I certainly appreciate it!

There is a chance that your pan when covered doesn't quite hold the steam or you are adding more water to rice than you should. Getting a pan with really tight lid is an option. You can try reducing the water equal to however much is left off and follow the recipe or let the heat stay on at low another 5 mins with pan covered and leave it like that from another 15 mins. I believe it should work either way . Thanks

ps..once lid is placed, it shouldn't be opened until just before serving time.

Hello theot71 ..You method is one of the traditional method used especially in commercial cooking and is also known as "Pith" method. The only downside to that you have to keep checking when the rice is cooked according to your preference, so rice can be taken off flame to drain the water. One thing is for sure that there is no danger of burning the rice with this method. You are correct about brown rice being different as it takes almost twice the cooking time as for white or basmati rice.

Tai….First make sure you are not putting too much water in the pot and then you don't need to keep it on low heat for half an hour…About 18-20 mins of stove time is good enough. Just make sure that you have a tight lid on top of pan before you turn the stove off. Then leave the rice to cook with residual heat for about 15-20 minutes. This should get you perfectly cooked brown rice. Thanks

I do a smiler method with white rice, except after I turn off the heat I drain the water before letting the rice sit for 20 minutes. You appear not to do this, I guess brown rice is different and needs more cooking and water. I also like to add cloves, crushed cardamom and turmeric. I will try your brown rice method with the added flavors. Nice video.

Yes, more or less. You may have to play around the with time a little to see what gives you best result. The quality of pan and tightness of lid is very critical. Also your time may vary slightly due to your elevation and quality of cooking water. Still, you will spend less than half the energy and never overcook or burn ricewith this method. For best results, leave pot on stove after turned off, throw kitchen towel on the pot and open the lid only after designated time or before eating.

@Hyper131 …Thanks for your comment. We all go through same frustration of waiting too long for brown rice to cook. Due to the texture of brown rice it is only a few mins you can take off from traditional cooking time by using different techniques. Soaking the rice is one. Second is by limiting the stove time to about 11-12 mins and let rice cook covered with steam and residual heat. This way you have perfect rice in 30-32 mins, which is an improvement over 40-45 mins, it would otherwise take.

So far i soak it in water for an hour than put it in water and bring it to the boil than leave heat on low for half hour but than it comes out all wet n mushy 🙁

@Taimoor03 Brown Rice does take almost 40 mins to cook and cooking longer can mess up the texture. With my method, cooking time is essentially the same but you save half the energy and there is no danger of overcooking. Actual time on the stove may vary from place to place and the utensil you are using. How good a seal you form on your pot just before turining stove off will also determine te quality of your rice. So, you need to play around with time and find what is the best timing for you.

Soaking the brown rice in water before cooking, helps to soften the outer layer of rice. It's the same process as soaking beans for making baked beans.
