Your chicken adobo is from luzon and manila style and also your procedure. The best adobo is from visayas and mindanao in the philippines. The visayan style is to cook the chicken until not only tender but the sauce absorbed in the chicken. You will know it already done if the color inside somewhat the color of soy sauce. They dont add sugar. After washing with vinegar they have to saute the garlic together with the chicken. When when the sizzling sound almost silent. They put the all the ingredient until the sauce is absorbed or the sauce left almost dry must a little sauce left. Same as fish, pork , beef and mutton. The best to eat this adobo is to wait the next day. Ingredient bayleaf, black pepper. Garlic 4 tables spoon of vinegar as preservative. 1 cup of vinegar for washing
