I grew up cooking roast beef with a mix of herbs and spices…. I watched this video a few days before Christmas this year and decided I'll try this mix!! —I'm glad I did… I FELL IN-LOVE with your mix of herbs and spices!! I'm making YOUR roast beef from now on!! Superb!! ❤️

I just rub a little olive oil and Montreal steak spice on the roast put in a preheated 500 degree oven. Once in the oven I reduce temperature to 475 degrees and roast at 9 minutes per pound. Then turn oven off and DO NOT open the oven door for 2.5 hours.

I've never tasted any difference in a roast that was seasoned with salt and pepper just after I browned it than I have a roast with all those herbs, spices and seasonings on it. I think all that stuff just make people feel like they are gourmet cooks. just a simple marinade or about 8 hrs works for me.

It actually does hurt to baste. It release heat from the oven which leads to uneven cooking and prolonged cooking times. Everything else look good though.
