I used to throw away day old sushi rolls because the rice gets hard overnight and you can’t warm them up in the microwave because that will end up cooking the raw fish. But that was such a waste of great quality food. I realized I could totally cook the fish and eat the leftovers in the form of fish soup or stew. I added kimchi in this video, but I love this dish just as much without the kimchi.
